Spinach, Cheese and Egg Bake Recipe

TOTAL TIME: Prep: 25 min. Bake: 35 min. MAKES: 18 servings


1 bunch green onions, finely chopped

1 pound fresh spinach, trimmed

5 tablespoons minced fresh parsley

1/8 teaspoon ground black pepper

12 eggs, beaten

1 tablespoon olive oil

1/4 cup butter

1/2 cup sour cream

1/2 teaspoon salt

1/2 cup grated Parmesan cheese

1 cup shredded Cheddar cheese


Heat the olive oil in a large skillet, then saute the onions for about a minute. Add the butter followed by the spinach and parsley. Stir for about 4 minutes then remove from the heat and set it aside.

In a large bowl, combine the beaten the eggs, sour cream, salt and pepper. Stir in the spinach mixture and Cheddar cheese. Lightly grease a 15 inch baking pan (13 inch pan for thicker slices) and pour the mixture into it. Sprinkle it the with Parmesan cheese on top.

Bake it uncovered, at 350 degrees F for 35. Cut into squares before serving.

This recipe is healthy for the whole family. It’s easy to make, and kids will enjoy the yummy taste too. You can serve this for breakfast with fresh fruit and bread, toast or muffins.

You can also add a few sliced mushrooms, chopped ham or a few slices of cooked and crumbled bacon. If you want a lighter recipe, you may use Egg Beaters instead of the eggs and replace Cheddar and Parmesan with low-fat feta cheese.

If you want to add a fragrant aroma to it you can add freshly chopped herbs like basil or dill. This is a very versatile recipe so you can easily adjust the ingredients to what suits you best. It’s easy to make and the leftovers will still taste great!
